Italian Picnic Sandwich
The perfect make-ahead beach sandwich!


1 loaf Italian or French bread
1/2 lb roast turkey, thinly sliced
1/2 lb Black Forest ham, thinly sliced
1/2 lb salami, thinly sliced
1/2 lb Provolone cheese, thinly sliced
1/4 cup mayonnaise*
1/4 cup mustard, country style is best
1 tsp each fresh parsley, basil, oregano, minced
2 cups tomatoes, thinly sliced
1/2 cup red onion, thinly sliced
1 cup red leaf lettuce, shredded

Cut loaf of bread horizontally to create a top and bottom. Remove bread from inside top slice without breaking the crust. Layer bottom slice with turkey, ham and cheese. In a small bowl combine mayo, mustard and fresh herbs. Spread over meats and cheese. Layer tomatoes, onion and lettuce. Cover with top of bread and press firmly together. Wrap sandwich tightly with plastic wrap if it is not being eaten immediately. Slice to serve.

*If you prefer, you can use a vinaigrette instead of the mayo and mustard mixture.
